I am debating between the 2 based on portability, would I notice a difference between the 15 and 17?

Common sense dictates that size and weight are the only two things that matter for portability. The 17 inch screen on the Sager adds about 2.2 pounds to the laptop. The sizes, well, change as well but if you get a backpack and are capable of carrying it around, the weight is your main problem.
The stock card, imo, is good enough even for the MMOs you said you would play. The upgrades, at the most, only cost about $60 more, but I really don't think they would matter that much.
If you have an SSD waiting, and considering the sagers come with 8GB as stock, no not really. If you get the 7970, I would suggest the IC Diamond upgrade. However, considering I have not used it, I don't know how effective it really is. I have heard it gives your CPU/GPU combo a respite of about 10 degrees C.
