Do you know whether the Eurocom 580 MXM is EC compatible?
no, the only way to know is to try and see what happens. if it fails to boot or just shuts down then it could be an incompatible EC.
I am fairly confident those 1070s for the AW17 they are selling are the MSI 1070s, which is non mxm 3.0b and will require modifying the chassis and heatsink.
They have been available for awhile now so they are probably not the "standard mxm 3.0b 1070/1080" @Eurocom Support said are coming "soon".
I have yet to see an RX480/580 version with a Clevo compatible thermal sensor...
We have few standard MXM 3.0b size cards coming soon: GTX 1070 and GTX 1080 as well as AMD RX580. They should work in any older laptop as long as it has eDP based LCD panel. Some of our new Coffee Lake Z370 laptops will support them too.

Yes - they will come without external power.
it would be interesting if they came with 4-pin power plug for the 1080
EDIT: So I theoretically could do 1080s in SLI? don't play me man!
