A client has an HP Elitebook 8740p with Windows 10 x64 and will be plugging it into various external displays with a displayport to HDMI adapter.

Is there an EASY display settings manager so the user can simply select the resolution for the external display, and switch between mirroring and extending the desktop?

It took me some doing to find the settings in AMD Catalyst Control center for switching to extended desktop, putting the primary desktop back onto the laptop, re-arranging their positions, and enabling the higher 1080p resolution on the external display.

And that's just for one display. If she plugs it into anything other than another decade+ old Vizio M220NV it's likely going to default to mirrored 1600x900. Ideally the laptop would automatically configure it, but many TVs don't communicate the information needed for that.

There is the Windows key [IMG]+ P for quick enabling, mirroring and using extended displays.
There is also [IMG]+ X to open the windows mobility mobility center which has some settings too.
I'm not sure if there is a fast way to set resolutions other than right click on that displays desktop and 'set resolution'?
I haven't used Catalyst in a while, but it used to have presets you could save.

You can always contact AMD support about their software settings.
