Are there any signs that we might see more? If someone made a good 120hz OLED laptop I'd give it a look straightaway.

Honestly probably not. There just aren't that many OLED laptop screen manufacturers out there thus why there are shortages for OLED screens. What id like to see is gaming laptop manufacturers move away from the color washed tn panels and start hopefully seeing some nice rgb accurate 120hz ips panels.

There are plenty of High Quality TN Displays out there and even IPS 120Hz displays. I kinda prefer the TN due to their higher response times.

OLEDs have <0.1ms G2G. A high quality TN (or any other LCD) is a snail in comparison.

At least by the time OLED reaches laptops, they'll have had plenty of time to tune software to prevent burn-in.

A gaming notebook with a super fast OLED panel would be an absolute delight, but I think OLED will be reserved to a select few ultrabooks and tablets for now. The closest we've gotten is the Alienware 13, and that's still no bigger than 13.3". I would love to see an OLED XPS 13, preferably not glossy, as I would find it more attractive than the HP Spectre x360.
