I tried renaming nvapi64.dll, but this method obviously doesn’t work on Win 10 1809...
I can’t update my drivers past 391.xx as it brakes 10 bit per color of my DC panel (known issue with DC under Win 10 with newer drivers) so I have to stuck to 391.35.
    How to bypass this limitation?

IIRC, Windows 8.1 boots to the desktop by default, and there's still software that will replicate the Windows 7 start menu.

Is there any other way I could bypass this driver check..?
In general, which version between 8.1 and 10 is better in your opinion?

Windows 8.1 is not bad at all. With a good Start Menu replacement (I prefer StartIsBack), the experience is very similar to Windows 7, without much of the Windows 10 crap. It’s a shame that DX12 was backported to Windows 7, but not 8.1, since it means games like WoW (in DX12 mode), and DX12-only titles like Gears 5 and Call of Duty: Modern Warfare, only run on Windows 7/10. But for games which use other APIs (including BFV, which supports both DX11 and DX12, with the former being usually more performant anyway), Windows 8.1 is a fine choice.
