Instead of as a gaming rig lol? I suppose a little backstory is in store here...

I got a Area 51 r4 last year at valentines day. I was actually looking to get a real workstation and the vday sale on dell made it perfect. 7820x, 16gb ram, 128 m.2 and 2tb hdd, and 1080ti for $2743. I got $300 back from dell due to vday and $400 back from ebates due to vday. Since video cards were still crazy expensive, I took the 1080ti and put it in my actual gaming pc and sold my two 1080s for over $600 each. I then sold the piece of junk that I used for a workstation (For around $400 for all parts) and put the 1060 6gb in my area 51.

I added 32gb ram (And yes, it works as 48gb in quad channel, I've tested it with multiple ram tests), some more ssds and hdds, more fans, and another 1060 6gb. In the end I only paid around $1100-$1300 and it runs cool and fast

There is no point in making such a machine single purpose. If you workloads you can use on it beyond consumer stuff then more power to ya bud lol

To me that's kinda saying, 'Why not use an all in one instead of a laptop and a tablet'

If I can get the best for each usecase I'd do it esp. if I got a good deal like I did

It's like me I keep packing in more hardware into my Ranger and by the time I'm done I might as well get a desktop. I like my ranger though lol so I'll get something else for the mobile day to day.

People do workstations with regular hardware all the time. The real separating factor is quad channel and quadro, and even then there are ways around quadro via softquadro and firmware modifications.
