WMP and VLC for most stuff
Arcsoft total theatre for DVD and Blu-Ray's ( Win DVD and Power DVD keep ticking me off )

WMP for videos
VLC for anything WMP can't do

For video, Media Player Classic Homecinema + Windows 7 = plays 99.9% of the content available on the entire Internet - just can't handle the craptastic Real Media stuff but I could care less about that.

I don't use Windows Media Center, but if I did I'd install Haali's Splitter so it could play Mastroska .mkv files.

For video, that's it, nothing else is required, to play anything, ever. Windows 7's internal decoders negate the necessity of any third party codec installations or the nefarious "codec packs," regardless of who puts 'em out. No sense clogging up a nice solid OS with a bunch of useless codecs/filters - the OS can do all that for you now.

For audio, foobar2000 with the DarkOne v1.6.1 theme.

well, that one plays back everything trough mediacenter, duh..
