But did they also all have tomato sauce on them? The question is just, would pizza bread with cheese alone on it be considered a pizza or just...bread with cheese? Apparently a pizza with just sauce on it isn't, so is a pizza with just cheese on it a pizza?

Most do.
The exception is pizza bianca which, obviously, substitutes the tomato base for some form of white sauce, such as sour cream.

So technically tomato sauce isn't integral to a pizza but simply melting cheese onto a dough base would not be a pizza.

If a pizza lacks tomato sauce, it's usually replaced with either a garlic-based sauce (white pizza, often topped with grilled chicken and green vegetables, usually spinach and/or broccoli), or barbecue sauce (usually for a BBQ chicken pizza, sometimes with bacon). Sometimes tomato-based salsa is used for a Mexican-style pizza, usually topped with seasoned ground beef, with shredded lettuce, tomato, shredded cheese, black olives and sour cream added after baking. God damn now I want a Mexican pizza

I would say a pizza is defined by crust, sauce and cheese at the bare minimum. These can have some variations (e.g. thin flatbread-style crust or full rising dough traditional crust, or white garlic sauce instead of tomato sauce, and different types of cheese), but completely removing any of these three major components makes it no longer a pizza.

For example, cheesy breadsticks are made with pizza crust dough topped with cheese and brushed with butter, no sauce, baked and sliced in the same oven that pizzas are baked in. But it's not pizza; it's just bread with cheese.

I used to work in the kitchen at a pizzeria for two years, and I do not recall a single order for pizza with no sauce or no cheese
