Show me a D700 that does 21MP images - ah yes, I forgot, Nikon users like their pixel counts low

-> The point you completely neglect is bandwidth - there wasn't the technology to do that at the time the 5D MK II comes out.
If you want high pixel counts go buy a point and shoot. If you want high IQ buy a Nikon....

Du.... -> This is where Nikon users fail completely

A point and shoot has significantly smaller pixels than any Canon SLR.
-> Also, higher pixels count = better cropping ability + more detail, i.e. better chance to magnify parts of the image.

On that note though, you need good lenses to use high MP sensors.
And the 5D MK II has larger pixels than a 1D MK IV -> oddly enough the 1D MK IV is about the same, or maybe even slightly better at high iso compared to the 5D MK II.

Pixel size alone is irrelevant (within limits).

Also, has Nikon started to build their own sensor yet, or are they still scavenging?

Where the sensor comes from is irrelevant to IQ BUT the D3, D3s, D700 and D3100 are made by Nikon. My D7000 sensor is a Sony sensor. This will mean the soon to be release D5100 is also a Nikon sensor.

The cropping ability does bother me a little but not enough to comprise IQ.

Actually it does matter in that you just buy a rebranded product
-> On that note, the panasonic built leica P&S are a disgrace to the Leica name.

-> Image quality: As I said, the 1D MK IV is at least equal, maybe even a bit better than the 5D MK II, so if Nikon users use less resolution it's because they aren't good enough to make a good high density sensor.

    Dslr Lens Simulator

It`s on the Nikon Website but it should give you some idea, even for other makes of lens you are considering buying, sorry if this is old news.

Spoken like a true Canon fanboy who doesn't understand that the mega-pixel war was a one man battle with Canon while Nikon improved their sensors for IQ and high ISO. Remember who the "low light king" is.

If I wanted big prints of landscapes I would shoot with Canon or the Nikon D3x if budget wasn't a concern. Everything else would be with a Nikon.

And Canon was improving along the way too.
-> What you don't realize (and most low pixel count lowers don't), is, that you can offset any additional per pixel (!!!) noise by reducing the resolution in post processing.

-> A 5D MK II reduced to 12MP will be no worse than a D700, but a D700 will never ever give you the resolution of the 5D MK II

-> There was a nice link about this somewhere in this thread:
MP's...if less is more, than why do they add more? - Canon Digital Photography Forums

-> And regarding the AF EOS 5D MK II - AF - let's try to clear this up - Canon Digital Photography Forums

Tops out at 598mm... I guess Nikon lenses aren't quite where Canon is/are

-> 800mm, and they used to do a 1200mm one too

A second thought.....I did have a 7D with 18MP with a 1.6x crop. My 16MP D7000 with a 1.5x crop still works better at higher ISO and blows it completely away in dynamic range. IMO, until Canon learns how to get better DR from their sensors it will force it's landscape shooters to continue to use HDR for better IQ. When a $1200 DSLR (D7000) completely blows away a $6K DSLR (1DsMKIII) in dynamic range it becomes better to shoot Canon film then ANY of their modern systems.
